A Summer Recipe Contest
Send in your favorite warm weather recipes. It might be cold, cooked on the grill, use garden produce; or be frozen :). There are no special rules or restrictions. I may edit a recipe for health or ease so don’t be afraid to send in an old favorite that might not be as healthy as you wish it to be. Think about breakfasts; lunches; snacks and dinners that you enjoy when the temperature is hot outside. Enter as many recipes as you like.
Recipes will be judged on uniqueness, health, taste, and how appetizing they are for warmer weather.
I’m thinking of a phrase from a Sesame Street song: “Don’t worry that it’s not good enough for anyone else to hear…just sing, sing a song.”
The recipe that you think someone else already sent in, or is too simple…may just be the winning recipe. So don’t be afraid to enter, let me sort it out :).

Oatmeal is always a great, healthy breakfast, but hot oatmeal in the hot summer isn’t really what we want. Try Refrigerator Oatmeal – healthy and delicious – not our original recipe, but one my daughter has adapted and made for me. She has had to eliminate most sugars and carbs from her diet due to some chronic pain issues. At 15, she is becoming quite the cook and really knowing how to eat healthy.
Raspberry-Vanilla Refrigerator Oatmeal
1/4 cup low fat Greek Yogurt – my favorate is Greek Gods
1/3 cup almond milk
1/4 cup old fashioned oats (uncooked)
1 1/2 teaspoon dried chia seeds (yes, like the cha, cha, chia – best place I found these is on Amazon – several to choose from or perhaps you may have a health food store near you)
1/4 teaspoon vanilla extract
1 tablespoon raspberry jam – no sugar added – look in the natural food section of your grocery store – may be more expensive, but worth the extra money by cutting sugar from your diet
1/4 – 1/3 cup fresh raspberries – enough to fill the jar
In a half pint (1 cup) jar, add yogurt, almond milk, oats, chia seeds, and jam. Put lid on jar and shake to combine. Take off lid, add raspberries and stir gently until mixed throughout. Cover again and refrigerate overnight. A great breakfast that gets you going on the right start.
Chia seeds are a really unique seed – expands and thickens the oatmeal (somewhat like a tapioca).
