I’m hiding in my room with 85% dark chocolate. All of my kids had the day off school and most requested a friend over or 2…or 3. That made 14 children at the house today and only 1 casualty, so far.
It’s a miracle with the epic nerf and laser tag wars going on.
We made ham and cheese calzones for lunch with sides of orange slices, red grapes, carrots and broccoli and dip. It’s a frugal and nutritious way to fill a lot of growing bodies.

After lunch we loaded up both vans to get to a park the next city over. We’re normally under a bunch of snow this time of year, but the temperature was in the 50’s and we took advantage. This park had a zipline, rock climbing wall, and an impressive jungle gym.
It was unfortunate that I arrived at the park with only 11 kids instead of all 14…..oops. I still feel bad. Thankfully, my husband was at home so they weren’t just left alone, sigh. They were disappointed, but they’ll never say, “They are taking too long to load the van, let’s go jump on the trampoline” again.
When the sun went behind the clouds, we headed back to the house for Coffman cookies. Heidi and I made up this recipe awhile back and it’s our signature cookie. Two kinds of chocolate, brown sugar, peanut butter and rolled oats……ooey gooey, yummo.
Coffman Cookies
1 cup butter, softened
2 cups brown sugar
2 cups white sugar
4 tsp vanilla extract
4 eggs
1 cup peanut butter
1/2 cup milk
2 tsp salt
1 tsp baking soda
2 tsp baking powder
4 cups flour
4 cups rolled oats
1 package 12 oz semi-sweet chocolate chips
1 package 12 oz milk chocolate chips
Preheat oven to 375 degrees. Cream butter and sugar until light and fluffy. Beat in peanut butter, vanilla and eggs, then milk. Add remaining ingredients mixing well after each addition. Drop by spoonfuls onto greased cookie sheets. Bake for 10-12 minutes. Cool for 5 minutes on the sheet before removing them to a cooling rack. Makes around 8 dozen cookies.
We don’t often have a day like today, but I’m open about doing it more.

I love that you left them at home when they took too long. I keep “threatening” my kids with that, but they are too little for me to actually carry through – thankfully, they haven’t caught on to that part yet!! 😉
Justine, I felt so bad! I really didn’t miss them until it was too late. That scared me a little, but at least they were home with a responsible adult. I doubt they will ever run off again!
