Cold Suppers–Classic BLT

 

The classic combination of bacon, lettuce and tomato is widely loved, but often forgotten when we make our meal plans.  I like mine with cheese and pickles too :).  For those watching their carbs, it can be made into a wrap with a tortilla, pita or flatbread.  For those wanting to bulk up a bit, try making it club style, layered with several slices of whole grain bread as pictured above.

Add nutrition by adding veggies such as thinly sliced cucumber, sweet peppers or avocado.  Ad flavor by spreading the bread with fat free plain yogurt and sprinkling with lemon pepper.

To keep from heating up your kitchen, fry your bacon on a glass plate between two layers of paper towels in the microwave.  If you have an aversion to microwaves, a Foreman style indoor grill does wonders too.  We prefer Turkey bacon as it cooks up flat and has more meat than fat on it.

Serve with fresh grapes, veggies sticks and a large tossed salad (hopefully from stuff you gleaned from your kitchen garden.)

    I don’t think I’ve ever eaten a BLT quite like this, but I’m always up for trying new things.

    Did you know that you can use plain yogurt as a facial mask? I learned that from a make-up guru I watch on youtube. You just leave it on your face for 20-25 minutes, and then rinse with lukewarm water. Your face should feel cool and refreshed. It helps decrease redness.

    Those are great ideas on jazzing up a BLT. Chili’s has a spicy turkey club BLT that is delightful. It’s just a BLT with turkey deli meat, avocado, and sprinkles of cayenne pepper and cilantro. I think I’m putting this on the menu for next week.

    Oh, this looks simple and easy…and what an easy way to get in the healthy veggies, too 🙂 🙂 I love bell pepper and avocado. I made avocado ice cream, not too long ago. It tastes really good…n ot anything like you would think when here the name 🙂 🙂 🙂

    Cook the bacon in the oven! Preheat the oven to 400. Place a wire rack on a cookie sheet (with sides). Lay the bacon on the wire rack. When the oven is hot, place the pan in the oven and cook for 14 – 17 minutes (depending on desired crispiness). The bacon doesn’t curl up or shrink as much as when cooking on the stove.

    No spatters on cooktop — and my oven doesn’t seem to be much more of a problem than from regular use.
